Chicken Salad Recipe:

Primo Chicken Salad

There's nothing like a cool chicken salad to liven up a boring day.

4 chicken breasts
2 garlic cloves
8 cups leaf lettuce
20 jumbo ripe olives
2 navel oranges, peeled and sliced

Dressing
3 Tbs red wine vinegar
2 garlic cloves
1/2 tsp salt
1/3 cup extra-virgin olive oil

Prepare grill or preheat broiler. Rub chicken with garlic, then discard garlic. Grill or broil chicken on a rack 4 to 5 minutes on each side until cooked through (170 F on a meat thermometer). When chicken is done, transfer to a cutting board and let cool. In the meantime, wash and dry leaf lettuce. Arrange lettuce, olives and sliced oranges onto individual plates.

Prepare dressing. Mix together wine vinegar, minced garlic, pepper, olive oil, chopped red onion and celery. Chop or pull apart chicken and mound onto plates.

Drizzle salad with dressing and serve.

Yield: 4 servings.
